Etang d'Urbino

06 August 2008

This restaurant takes its name from a nearby pond which has belonged to the Bronzini de Caraffa family since the 19th century, when their ancestor married the daughter of a rich trader from the Balagne.

The pond is currently exploited for the breeding of oysters.

A third of the total production is consumed at the restaurant; another third is exported to Sardinia, while the rest is generally sold during the Christmas period.

The oyster farm is located nine kilometres north of Ghisonnaccia on the N198 road.

Ghisonnaccia is easily accessible from Ajaccio, located one and a half hours away.
